The Xion is the previous entry-level Albariño from younger vineyards, which were nevertheless set up as a pergola. The floor is embossed with granite with sand and clay. The grapes receive a cool pre-fermentation after the handle. After spontaneous fermentation, the wine is aged on the fine yeast.
Nose
The 2023er Xión opens with flower and herbal scents such as lemon balm and fennel greens. In addition, there are lemon peel, notes of green apples, green almonds, some salty sprinkles like from the near sea, herbs and a touch of yeast.
Palate
On the palate, the Xión shows a fresh and slightly extract-sweet juiciness. The wine has substance, but looks pleasantly uncomplicated with a tight acidity and good pull, which is supported by the salty note, which quickly reveals itself. The fruit is more greenish than yellow with citrus, slightly bitter-spicy notes. In addition, there is a fine creaminess from the expansion on the yeast. This is handmade entry-level Albariño at the best level.
