Pinot Meunier or Schwarzriesling forms the basis for racy, spicy sparkling wines. This was planned as Dosage Zero, i.e. an area that allows up to 3 g/l residual sugar. Wine is a natural product and especially during the second fermentation or the yeast storage, fluctuations in the residual sugar can occur. The values fluctuate within the batch from 3.4 g/l to 6 g/l. However, the majority of the batch is located in the lower range and is consistently dry and straight-line. A second batch from this harvest will follow, which will then mature much longer on the yeast.
