Celler Credo Mirabelles 2019 is an organic and biodynamic white wine from the Penedès region in Catalonia, Spain, produced by Celler Credo, the still wine project of the renowned Recaredo winery. This wine is crafted exclusively from 100% Malvasia de Sitges grapes, a rare and aromatic variety native to the area.
In the glass, Mirabelles 2019 presents a light gold color with a slight shimmer. The nose is intensely aromatic, offering notes of ripe mirabelle plums and a subtle floral undertone. On the palate, it is harmoniously balanced with mineral nuances and a refreshing acidity, leading to a complex and finely structured finish. The wine's character is shaped by biodynamic vinification and sustainable soil care.
The grapes for Mirabelles are hand-harvested and undergo a four-hour maceration period. Fermentation occurs spontaneously with indigenous yeasts in red clay jugs, contributing to its unique profile. The wine is then aged in stainless steel tanks for 18 months before bottling.
With an alcohol content of 10.5%, this wine pairs excellently with seafood, white fish, or light summer salads. For optimal enjoyment, serve at a temperature of 13°C.
