A typical southern Italian recipe with fried eggplant and ricotta. The sauce is substantial and goes well with pasta formats such as penne and mezzemaniche. Ripe tomatoes and eggplants, ricotta and a lot of handwork are in this sugo from Don Antonio. In taste it is flattering and fruity.
